Grilled Asparagus with Zucchini and Goat Cheese

There is an old saying: “the first blow is half the battle!” And this is absolute true for a romantic dinner for 2! So this romantic appetizer is certainly a good start. Of course you can serve this as a vegetarian main dish as well.

Ingredients:

  • Asparagus stalks 8 oz / 225gr
  • 32 oz / 900gr of zucchini peeled and sliced
  • 8 oz / 225gr pound goat cheese
  • 1/2 cup of virgin olive oil for sautéed
  • Freshly cracked pepper use a shaker to make it romantic in front of your date!
  • 1 pot of boiling water and 2 skillets required

 

Recipe:

  • In a large skillet of boiling water place the asparagus stalks for approximately 2 minutes
  • Place olive oil in skillet. Using tongs take the asparagus stalks out of the boiling water place on plate.
  • Heat skillet with olive oil to medium heat and take turns grilling asparagus stalks until they become brown. This should take approximately 5 minutes.
  • Add your zucchini to the asparagus and let them brown with asparagus.
  • Turn off heat and add your goat cheese and stir. Add fresh black pepper to taste.
